Stinky Tofu Cooking Method

If you ever find yourself in Taiwan, and never tasted the well known Stinky Tofu, then you simply aren’t in Taiwan. A stinky(not so stinky) dangerously delicious food that produces a lot/ hate feelings. You might not welcome the odour at first trial but will surely fall in love with it after you are accustomed to it. Stinky tofu is a fermented soybean with a different cooking method that varies according to the regions. The commonest is the fried one which is a good way to start if you have never tried it before. You are probably wondering right now that it undergoes a complex process that should be best left in the hands of professionals. However, here is a simple, practical method for you and your loved ones, given by 許正, one of the best Taiwan chef. From the fermentation to the preparation, have a fabulous stinky tofu time in the kitchen. 

Fermentation
The processing of tofu is similar to cheese making and it is based on fermented soy milk that has undergone brining process. The fermentation process starts with the marination of tofu in a brine of fermented milk. Vegetables, fermented shrimp, and meat are added. It is put in an open jar for several months and this can be attributed to its stinkiness. Then, the tofu is marinated in the brine for 4-6 hours for more flavour. 

Natural microbes are produced and they acted on the tofu to create broth and the funky smell. The final tofu favour can vary depending on the location it is made, the temperature as well as the time, just like cheese. 

If you do not want the street stinky tofu smell, there are commercial slabs of firm tofu that can be purchased in Asian stores which most times undergo brining process for 2 days. Here is a good way to start and give this unique delicious Taiwan snacks a shot. Let’s dig in!

Ingredients
Prep time: 24 hours  Cook time: 20 minutes Serves: 4

14-ounce block of firm tofu
4 stinky fermented bean curd, mashed
1 teaspoons cornstarch
1 tablespoon coriander
1 teaspoon baijiu
1 teaspoon fennel powder
4 teaspoon vegetable oil


Sauce 
1 teaspoon sugar
2 teaspoons garlic sauce
2 spring onions, diced
1/2 teaspoon red chilli peppers( optional)

Preparation
  • Place the tofu on cutting board and cut in small rectangular pieces.
  • Mix the baijiu with water, and add fermented bean curd in a container
  • Soak the diced tofu in the fermented bean curd water for marination
  • Cover the container and let it in the refrigerator for 24 hours
  • After 24 hours, take out the refrigerated tofu, drain it and put it aside
  • Pour some cornstarch in a bowl and coat the tofu with it. 
  • Put a cooking wok on a medium-high heat and add the vegetable oil
  • Once heated, put the tofu, and fry until it turns golden brown.
  • Remove from oil and place on a paper towel

Sauce
Put soy sauce, garlic sauce and chilli sauce in a bowl and mix well
Add the sugar and the lemon juice.

Sprinkle the sauce, spring onion, coriander on the tofu and voila!

Tips
If you want the stinky tofu to be stinkier, elongates the soaking process to more than 24 hours. 
 Add salt to the brine according to how salty you want the tofu to be.

The Taiwan’s like their tofu paired with sweet or spicy sauces and the smell alone is enough to make their stomach rumbling. Well, it is stinky, but the addict says, the smellier it is, the better.

Chatime Pearl Milk Tea Ingredients


Is chatime Pearl milk tea your addictions or occasional treats?  This Taiwan's most famous drink is everyone’s pastime sold at trendy shops and almost at every street corner nowadays. However, do you know that this creamy, delicious favorite drink of yours can be made at home?
Xu Zheng, a Taiwan reputable cook, shares his simple recipe to let get you started.

What is chatime pearl milk tea?
Chatime pearl milk tea has been called different names in different countries. Chatime pearl milk tea also called milk tea, pearl tea, bubble tea, boba nai cha, boba tea, tapioca tea(to name a few) originated from Taiwan and has gained popularity worldwide.

Either you want it sweet or savory, or you prefer milky or not, or yours is fruit or nut, this beverage is there to serve you according to your preference. Plus, it has chewy bouncy balls to munch on and have fun. 

Moreover, there are different flavors such as black or jasmine tea for plain tea flavor, strawberry, honey or mango for fruit flavor infusion, and also Taro. However, this article is all about the simple classic black tea with milk. It’s not too sweet unlike the ones sold in shops, super-fast except for the cooling time, and almost all the ingredients required (except for boba) are sitting right in the kitchen cabinets. Let’s dig into it!

Ingredients
1-2 black tea bags (per serving)
1 cup of boiled water
1/4 cup quick-cooking tapioca pearls (per serving)
Whole milk (or any other preferred milk)
1/2 cup sugar granulated sugar (or more as preferred) 

Syrup ingredient
1/2 cup of water
1/2 cup of sugar

Preparation

Prepare the tea
Add a cup of water in a pot and bring to boil on high heat.
Remove from heat after it is boiled and add 1 tea bag or  2 for a stronger tea flavor. 
Remove the tea bag after 15 mins and leave it to cool.

Prepare the syrup
Heat 1/2 cup of water either on the stove or microwave
Add 1/2 cup sugar and stir together
Remove from the heat when the sugar is dissolved

Prepare the boba or tapioca pearls
Put 2 cups  of water to a saucepan and bring to boil
Add ¼ cup of tapioca balls and stir immediately to avoid sticking
Leave it to boil for 5 mins. It is done when it is soft and floating on the water. 
Drain using a strainer and transfer to a clean bowl.
Pour the prepared syrup on it until the boba is immersed.
Leave it for 20 mins in room temperature 
Strain the boba and refrigerate until when it’s ready to be served.

Assemble the Chatime Pearl Milk Tea
Put the prepared boba in a serving glass and pour the prepared tea on it
Add whole milk or desire milk for that creamy Chatime pearl milk tea
Add the syrup for more sweetness.

  • Tapioca pearls or boba can be purchased at any Asian market or online. However, read the instruction on the packaging carefully. While some can take up to 2 hours there are quick ones that are edible within 5-10 mins.

  • This recipe is best when used or served immediately it is boiled as the pearls start to stiffen and crunchy after 1 or 2 hours. 

  • Use whole milk for Chatime Pearl Milk Tea, it makes a huge difference. 

  • For an iced cold Chatime Pearl Milk Tea cravings, add tea, ice, milk excluding the boba in a cocktail shaker. Shake well for a few seconds, and then pour into a glass filled with boba and ice.

  • Experiment with other tea such as Thai tea, chamomile tea, or anyone that you love. Come up with something new and tasty.

如果不提供這種受歡迎的台灣主食 – 魯肉扇(紅燒豬肉飯),台灣BNF週將不會完整。燉是我最喜歡煮肉的方法之一。它不僅經濟而且高效。第二天紅燒肉味道更好。

當涉及到切碎或立方體的豬肉類型時,有幾種版本。在台灣南部,菜單上可以看到“Bah-sò(肉味)”(碎豬肉)。把它想像成中國肉醬汁。對於這個食譜,我將使用立方體版本去台灣北部。

配料:

  1. 17盎司(500克)肩托 – 切成約1厘米的小方塊
  2. 2湯匙乾蝦 – 浸泡30分鐘並切碎
  3. 1/4杯(50毫升)優質醬油
  4. 2湯匙黑醬油
  5. 1/4杯(50毫升)米酒(我正在使用邵青)
  6. 4湯匙炸青蔥
  7. 2湯匙炒蒜末
  8. 2個八角茴香
  9. 一撮五香料粉
  10. 1片中等大小的冰糖/ 2湯匙白糖
  11. 一些熱水

  1. 蒸米飯或雞蛋麵
  2. 完全煮熟的蛋

在大鍋或炒鍋中,加入切丁的豬肉煮約10分鐘,直到鍋中的液體幾乎蒸發。加入蝦米,冰糖,八角茴香,五種香料粉,翻炒30秒。不要擔心冰糖是否仍然堅硬,因為它最終會融化。加入醬汁,小蔥,大蒜和½米酒,攪拌一分鐘。蓋上蓋子,煮5分鐘。醬應該是冒泡的,稍微厚一點。加入足夠的熱水覆蓋豬肉(我們需要肉汁稠度,而不是湯),放入煮熟的雞蛋(如果使用),煮30分鐘。偶爾翻蛋,使兩側均勻燉。

許正牡蛎煎蛋卷

台湾牡蛎煎蛋是一种经典的街头美食,但它也可以制作美味的早午餐/午餐 – 易于制作,味道浓郁。 厨师許正分享简单的食谱牡蛎煎蛋卷.

配料:

面粉混合物(黄色):

  1. 130克甘薯粉(或木薯粉)
  2. 720毫升水,或更少
  3. 70克普通/多用途/小麦粉
  4. 1茶匙细盐

米粉混合物(粘白浆):

  1. 30克米粉
  2. 400毫升水

煎蛋卷调味品:

  1. 240毫升油
  2. 12个鸡蛋
  3. 8茶匙淡酱油
  4. 4茶匙鱼露,最好是红船
  5. 4茶匙中国料酒,尝试使用更老的葡萄酒,如10年
  6. 4汤匙大蒜,去皮和半精细捣碎
  7. 16个大牡蛎,或24个小牡蛎
  8. 4汤匙葱/葱,切成0.5厘米

装饰:

  1. 白胡椒,可选
  2. 香葱
  3. 香菜叶和嫩茎,1英寸

传统蘸酱:

Cilicuka(原装,超热或超热)

注意:

  1. 使用优质酱油,如Kwong Woh Hing或Kwong Cheong Thye,只有2个当地的酱油酿酒商。如果你使用好酱油有天然谷氨酸盐,他们不添加味精。对于这种低成本的物品,最好使用本地和真实的东西。
